Lamb Kebabs in White Wine

A few weeks ago, my Russian friend Pavel gave me a couple of recipes for Russian Shashlik.  Shashlik (also spelt Shashlyk) is a type of kebab that is popular in Russia – originating from the Caucasian Mountain tribesmen!  Shashlyk means “skewered meat” and is usually made from lamb, but can also be made from pork or even beef.  Typically, the skewers are loaded entirely with meat, but it’s also popular to cook vegetables alongside the meat on the skewer.  This recipe is for lamb kebabs, marinated in white wine and served with vegetables.


Lamb Kebabs in White Wine

This recipe will make about 2 large skewers of meat plus vegetables.

 Ingredients :

  • 500g Lamb cubed
  • Dry white wine (about 250ml)
  • Butter
  • Onion
  • Tomatoes
  • Aubergine (egg plant)
  • Bell Pepper
  • A bunch of Spring onions
  • 1 Lemon
  • Parsley, Dill or other herbs.
  • Sugar, salt, pepper.



To make lamb kebabs, it’s important to marinate the lamb first, to impart flavour and also to ensure the meat is tender.  To prepare the marinade, finely chop the spring onions.  Cut the lamb into small cubes, and rub in some sugar, salt and pepper.  Put the lamb into a pyrex bowl with the chopped spring onions and pour in the wine.  Mix well, then cover and refrigerate for about 3 hours, or longer if you have the time.

After the meat has been marinated, prepare the skewers.  Thread the lamb cubes onto metal skewers.  Discard the marinade.  Next, prepare the rest of the vegetables.  These will be cooked separately on their own skewers.  Slice the remaining onions. Cut the tomatoes, aubergines and bell pepper into cubes and thread onto skewers in alternating order.

Prepare a barbecue and get the charcoal to a  medium-high heat.   Place the lamb kebabs & vegetables onto the grill.  I actually ran out of skewers so I put the vegetables into a separate vegetable grill tray and grilled them that way.

Turn the skewers frequently while grilling to cook the meat evenly. Slide lamb and veggies off skewers. Combine in a bowl carefully. Pour melted butter and some wine over. Sprinkle with lemon juice and the chopped herbs.

There you have it, lamb kebabs Russian style!
