BBQ in the USA

Barbecue in the United states has four main styles related to regions where they originate from and are most popular.

The four key regions of US BBQ are:

  • North Carolina
  • Kansas city
  • Memphis
  • Texas

Each region’s barbecue style is characterised by their meat preference, the type of sauce they like to use and the rub (spice mix) they apply to the meat.

Memphis style specialises in pork-shoulder with sweet tomoato based BBQ sauce. In North Carolina, they prefer vinegar based sauces and they love to cook the whole hog. Kansas city style is famous for its ribs while in Texas, they love their beef brisket!
